For those that dont know, I have a wok..I love my wok and should cook with it more often. SO I thought I'd share last night's dinner (done in 15 minutes..BONUS) and left overs for lunch today...mmm ..mmm. GOOD! I'll warn you that I measure very infrequently when I wok. I just splash the ingredients together so I'll give you estimates:
1 wok (heat on high)
Sesame oil (in the wok..I pour it in until there's a 1/4 in at the bottom)
thin sliced chicken breasts
1 cup soy sauce
1/2 cup orange juice
1-2 tablespoons Ground ginger
1 package of asian vegetables (I got the orange sesame steam pack) dont remember the brand but any veggies will do and they can be fresh or frozen.
Wash the chicken (I wash all meats that enter my kitchen) and mix all the ingredients except the veggies & sesame oil into a bowl big enough to hold that and the chicken slices.
Plop the Chicken into the bowl and slop them around so they get a good coverage of sauce.
Heat up the wok (dont heat the oil before getting the ingredients together..if youve wok'ed before you know that a wok heats up WAAAAAY fast and you'll just burn your oil.
Place the chicken around the sides touching into the oil and cover. it only takes about 5-7 minutes and then you can turn them over. cook the other side.
When the chicken looks done, pour in the remainder of the sauce and all the veggies. Give everything a good toss once or twice so the sauce gets a chance to stir on everything (It will thicken with the heat) When the veggies are the right consistency (I like mine softer so Boogie can eat them easily) and remember if you're using frozen veggies that they'll need a little extra time, you're all done!
Of course Rice goes with this extremely well and if you are in a rush (as I frequently am) then ive found most brands carry some great rice mixes that are done in 5 minutes !
